Ingredients

1 lb ground beef

3 medium potatoes, peeled and diced

1 red bell pepper, diced

2 tbsp olive oil

1 tsp paprika

1 tsp ground cumin

Salt and pepper, to taste

1/4 cup beef broth or water (optional)

Chopped green onions, for garnish
Instructions

Heat olive oil in a large skillet or Dutch oven over medium heat.

Add chopped onion and minced garlic. Sauté for 2–3 minutes until fragrant.

Add ground beef and cook until browned, about 5–7 minutes.

Stir in diced potatoes and red bell pepper. Season with paprika, cumin, salt, and pepper.

Add beef broth or water if mixture seems dry. Cover and simmer for 15–20 minutes, or until potatoes are tender.

Remove the lid and cook for a few more minutes to evaporate any excess moisture.

Notes
For extra flavor, try adding shredded cheese on top during the last 5 minutes of cooking.
Yukon Gold or Russet potatoes work best for this recipe.
