  • 1 lb ground beef

  • 3 medium potatoes, peeled and diced

  • 1 red bell pepper, diced

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tsp paprika

  • 1 tsp ground cumin

  • Salt and pepper, to taste

  • 1/4 cup beef broth or water (optional)

  • Chopped green onions, for garnish


Instructions

  • Heat olive oil in a large skillet or Dutch oven over medium heat.

  • Add chopped onion and minced garlic. Sauté for 2–3 minutes until fragrant.

  • Add ground beef and cook until browned, about 5–7 minutes.

  • Stir in diced potatoes and red bell pepper. Season with paprika, cumin, salt, and pepper.

  • Add beef broth or water if mixture seems dry. Cover and simmer for 15–20 minutes, or until potatoes are tender.

  • Remove the lid and cook for a few more minutes to evaporate any excess moisture.

  • Taste and adjust seasoning as needed.

 

  • Garnish with chopped green onions before serving.

Notes

For extra flavor, try adding shredded cheese on top during the last 5 minutes of cooking.

Yukon Gold or Russet potatoes work best for this recipe.

Add frozen peas or corn at the end for extra color and nutrition
