  • 3/4 cup granulated sugar

  • 1 tablespoon cinnamon

  • 1/8 teaspoon nutmeg

  • 1/4 cup butter, melted


Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Grease or line a 12-cup muffin tin with paper liners.

  • Prepare the Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, cinnamon, nutmeg, cloves, baking soda, and salt.

  • Mix the Wet Ingredients: In a separate bowl, combine the pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Stir until fully combined.

  • Combine Wet and Dry Ingredients: Gradually add the wet ingredients to the dry ingredients. Stir just until combined—do not overmix, as this can result in dense muffins.

  • Fill the Muffin Tin: Divide the muffin batter evenly among the 12 muffin cups, filling each about 3/4 of the way full.

  • Bake: Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Remove from the oven and allow the muffins to cool in the tin for about 5 minutes.

  • Prepare the Cinnamon Sugar Coating: While the muffins are cooling, mix the granulated sugar, cinnamon, and nutmeg for the coating in a shallow bowl. In another bowl, melt the butter.
