For the Cake:

  • 1 box white cake mix (plus ingredients listed on the box, usually eggs, water, and oil)
  • 1 package (3 oz) Jell-O gelatin (choose colors like strawberry, lime, orange, or blue for a festive look)
  • 1 cup boiling water
  • 1/2 cup cold water

For the Topping:

 

  • 1 tub (8 oz) whipped topping (Cool Whip)
  • 1 cup mini marshmallows (optional)
  • Sprinkles or colored candy for decoration (optional)

Instructions

  • Prepare the Cake:
    Follow the instructions on the box to bake the white cake. Usually, you’ll need to mix the cake mix with eggs, water, and oil, and then bake at 350°F (175°C) for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for about 10 minutes.

  • Poke the Cake:
    Once the cake has cooled slightly but is still warm, use the end of a wooden spoon or a straw to poke holes all over the cake. Be sure to make the holes deep but not all the way to the bottom.

  • Prepare the Jell-O:
    In a separate bowl, dissolve the Jell-O gelatin in 1 cup of boiling water, stirring until fully dissolved. Add the 1/2 cup of cold water and stir again. You can use different colors of gelatin for a colorful effect—just make sure to use a separate bowl for each color.

  • Pour the Gelatin:
    Pour the prepared gelatin over the poked cake, making sure it seeps into the holes. You can drizzle the gelatin in different sections of the cake to create a rainbow effect, or mix colors for a more vibrant look. Allow the cake to cool for about 15-20 minutes at room temperature.

  • Chill the Cake:
    Once the cake has cooled, transfer it to the refrigerator and chill for at least 2 hours, or until the gelatin has set and the cake is fully cooled.

  • Add the Topping:
    After the cake has set, spread the whipped topping evenly over the cake, covering it completely. If desired, sprinkle mini marshmallows and colorful sprinkles or candies on top to make it extra festive.

 

  • Serve:
    Slice and serve the cake chilled. It’s a perfect dessert for Easter gatherings, potlucks, or just a fun treat with family.
