For the Cake:

  • 1/2 cup unsalted butter, softened

  • 1 cup brown sugar (light or dark)

  • 2 large eggs

  • 1 teaspoon vanilla extract

  • 1 1/2 cups all-purpose flour

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 teaspoon cinnamon (optional, but recommended)

  • 1/2 cup sour cream or plain Greek yogurt

  • 2 cups fresh or canned peaches, chopped (drained if using canned)

Optional Topping:

  • 2 tablespoons brown sugar

  • 1/4 teaspoon cinnamon


Instructions

  • Preheat the oven: Set to 350°F (175°C). Grease and flour an 8×8 or 9×9-inch baking pan (or line with parchment paper).

  • Cream butter and sugar: In a large bowl, cream the softened butter with the brown sugar until light and fluffy.

  • Add eggs and vanilla: Beat in the eggs, one at a time, then add the vanilla extract.

  • Mix dry ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

  • Combine wet and dry: Add the dry ingredients to the wet mixture in two batches, alternating with the sour cream. Mix until just combined.

  • Fold in peaches: Gently fold in the chopped peaches.

  • Add optional topping: If desired, sprinkle the top of the batter with a mix of brown sugar and cinnamon for a sweet, lightly crunchy finish.

  • Bake: Bake for 35–40 minutes or until a toothpick inserted into the center comes out clean.

 

  • Cool and serve: Let cool for 10–15 minutes before slicing. Serve warm or at room temperature, optionally with whipped cream or vanilla ice cream.

Notes

Fruit swaps: You can use nectarines, apples, or berries if peaches aren’t in season.

Make it a loaf: Pour the batter into a greased loaf pan and extend the baking time to 45–50 minutes.

Storage: Keeps well in an airtight container at room temperature for up to 2 days or in the fridge for up to 5 days.
