Ingredients

  • 2 1/2 cups granulated sugar
  • 1/2 cup light corn syrup
  • 1/2 cup water
  • 2 egg whites
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)

Instructions

  • In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring constantly, until sugar dissolves.
  • Continue cooking, without stirring, until a candy thermometer reads 260°F (125°C).
  • In a separate bowl, beat egg whites until stiff peaks form.
  • Slowly pour the hot sugar mixture into the beaten egg whites, beating constantly.
  • Add vanilla extract and continue beating until the mixture holds its shape.
  • Fold in chopped nuts, if desired.
  • Drop spoonfuls of the mixture onto waxed paper and let cool completely before serving.

Notes

  • Make sure the candy thermometer is accurately calibrated to ensure the sugar reaches the correct temperature.
  • If you prefer, use different types of nuts, such as pecans or walnuts, or omit the nuts entirely for a smooth texture.
  • For a slightly different flavor, you can add almond extract or other flavorings in place of vanilla.
