- 1/2 cup light corn syrup
- 1/2 cup water
- 2 egg whites
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
Instructions
- In a saucepan, combine sugar, corn syrup, and water. Cook over medium heat, stirring constantly, until sugar dissolves.
- Continue cooking, without stirring, until a candy thermometer reads 260°F (125°C).
- In a separate bowl, beat egg whites until stiff peaks form.
- Slowly pour the hot sugar mixture into the beaten egg whites, beating constantly.
- Add vanilla extract and continue beating until the mixture holds its shape.
- Fold in chopped nuts, if desired.
- Drop spoonfuls of the mixture onto waxed paper and let cool completely before serving.
Notes
- Make sure the candy thermometer is accurately calibrated to ensure the sugar reaches the correct temperature.
- If you prefer, use different types of nuts, such as pecans or walnuts, or omit the nuts entirely for a smooth texture.
- For a slightly different flavor, you can add almond extract or other flavorings in place of vanilla.
