4 cups cooked, cubed or shredded boneless, skinless chicken breasts

8 slices cooked bacon, chopped

3 cloves garlic, minced

1 cup ranch dressing

1 cup shredded mozzarella cheese, divided

1 cup shredded cheddar cheese, divided

Version 1 with Broccoli:

5 cups broccoli, cut into florets

Version 2 with Spinach:

1 lb frozen spinach, thawed and squeezed to drain well

Instructions

Preheat your oven to 350°F (175°C).

In a large bowl, combine the cooked chicken, bacon, garlic, ranch dressing, and half of the mozzarella and cheddar cheeses.

If making the broccoli version, add the broccoli florets. For the spinach version, stir in the drained spinach.

Mix everything together until well combined.

Transfer the mixture into a greased 9×13-inch casserole dish.

Sprinkle the remaining mozzarella and cheddar cheeses on top.

Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly, and the cheese is melted and golden.

Notes
For extra richness, you can add cream cheese to the ranch dressing mixture.
Feel free to swap out the vegetables based on what you have on hand; cauliflower also works well.
This casserole can be made ahead of time and stored in the fridge for 2-3 days. Reheat in the oven at 350°F for 10-15 minutes.
