Ingredients

Scale

For the Waffle Sandwiches:

  • 1 box of mini waffles (or make your own using a mini waffle maker)
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  • Fresh mixed berries (strawberries, blueberries, raspberries, blackberries, etc.)

For Garnish:

  • Extra berries for topping
  • Mint leaves (optional, for decoration)

Instructions

  • Prepare the mini waffles according to the package instructions or cook your homemade mini waffles using a mini waffle maker.
  • While the waffles cool slightly, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  • Once the waffles are cool, spread a dollop of whipped cream on one side of each waffle.
  • Top with a few fresh berries, then sandwich the waffles together.
  • Garnish with extra berries and mint leaves, if desired.
  • Serve immediately and enjoy!

Notes

  • You can substitute whipped cream with Greek yogurt or mascarpone for a richer filling.
  • If you want to make it a bit sweeter, drizzle honey or maple syrup on top before serving.
  • For a festive touch, add a dusting of powdered sugar or chocolate shavings.
  • These are best enjoyed fresh but can be stored in the fridge for a few hours if needed.
  • Prep Time: 10 minutes
