  • Yield: 4 servings 1x
  • Diet: Vegetarian

Description

This simple yet flavorful side dish features tender sautéed mushrooms paired with fresh spinach, garlic, and a touch of balsamic vinegar. It’s a quick and healthy way to elevate any meal.

Ingredients

Scale
  • 2 cups fresh mushrooms (sliced)
  • 2 cups fresh spinach (washed and chopped)
  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme (or fresh thyme, optional)
  • 1 tablespoon butter (optional)
  • 1 tablespoon balsamic vinegar (optional)
  • Fresh parsley (chopped, for garnish)

Instructions

  • Prepare the Vegetables: Clean and slice the mushrooms. Wash and chop the spinach.
  • Sauté the Mushrooms: Heat the olive oil in a large skillet over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until they release their moisture and begin to brown, stirring occasionally.
  • Add Garlic and Spinach: Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Then, add the spinach and cook for 2-3 minutes, stirring occasionally, until the spinach wilts.
  • Season the Dish: Season with salt, pepper, and thyme (if using). Stir in the butter and balsamic vinegar (optional), and continue cooking for 1 more minute.
  • Serve: Transfer the dish to a serving plate, garnish with fresh parsley, and serve immediately.

Notes

  • Mushrooms: Feel free to use any type of fresh mushrooms, such as button, cremini, or portobello, for varied flavors.
  • Butter & Balsamic Vinegar: Both are optional but add a rich depth of flavor to the dish. The balsamic vinegar provides a subtle tangy sweetness.
  • Herbs: Fresh thyme can be used instead of dried thyme for a more vibrant taste.
