Ingredients

1 cup + ½ tbsp (240 g) full-fat cottage cheese

6 large eggs

½ cup (50 g) shredded cheddar cheese

4 tablespoons finely chopped scallions/spring onions

2 tablespoons all-purpose/plain flour (see Notes for gluten-free option)

½ teaspoon baking powder (use gluten-free if required)

⅓ teaspoon fine sea salt, plus pepper to taste
Instructions

Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.

Whisk the eggs in a large bowl until well combined. Add the cottage cheese, cheddar cheese, scallions, flour, baking powder, salt, and pepper. Stir until everything is well incorporated.

Pour the mixture evenly into the muffin tin, filling each cup about ¾ full.

Bake for 20-25 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.

Cool slightly before serving. Enjoy them warm, or let them cool completely and store in the fridge for up to 5 days.
Notes
To make these muffins gluten-free, simply use gluten-free flour and baking powder.
