Description

This Forgotten Chicken and Rice dish is a one-pan wonder! Tender, juicy chicken breasts are baked on top of a flavorful, creamy rice mixture, making it a perfect comfort food. It’s so easy to prepare with just a few simple ingredients, and the slow cooking method makes it incredibly delicious. The best part? You can forget about it in the oven while it does its thing!

Ingredients

Scale
  • 1 cup uncooked white rice
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 1 package dry onion soup mix
  • 1 3/4 cups water
  • 4 boneless, skinless chicken breasts

Instructions

  • Preheat the oven to 350°F (175°C).
  • In a 9×13 inch baking dish, combine the uncooked rice, cream of mushroom soup, cream of celery soup, dry onion soup mix, and water. Stir to mix everything together.
  • Place the chicken breasts on top of the rice mixture.
  • Cover the dish with aluminum foil and bake in the preheated oven for 1 hour and 45 minutes.
  • After baking, let the dish stand for 5 minutes before serving. Fluff the rice and serve with the chicken.

Notes

  • If you prefer, you can use bone-in, skin-on chicken pieces, though cooking time may vary slightly.
  • For a bit of extra flavor, try adding a handful of shredded cheese or fresh herbs to the rice mixture before baking.
  • You can also add some vegetables, like peas or carrots, into the rice mixture for a more complete meal.
  • Don’t skip the foil! It helps to trap the moisture and ensures the chicken stays juicy while the rice cooks perfectly.
