These crispy and savory garlic corn fritters are golden brown perfection with a flavorful combination of corn, Parmesan cheese, and fresh parsley. Paired with a spicy chipotle aioli, they make a delicious appetizer or side dish that’s sure to impress.

For the Fritters:

  • 1 cup corn kernels
  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup milk
  • 1 large egg
  • Oil for frying

For the Chipotle Aioli:

  • 1/2 cup mayonnaise
  • 12 teaspoons chipotle peppers in adobo sauce (adjust to taste)
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • Salt to taste

Instructions

  • In a large bowl, combine corn kernels, flour, cornmeal, Parmesan cheese, parsley, garlic, salt, and pepper.
  • In a separate bowl, whisk together milk and egg. Pour over the corn mixture and stir until well combined.
  • Heat oil in a large skillet over medium heat.
  • Drop spoonfuls of the corn mixture into the hot oil and flatten slightly with the back of the spoon.
  • Fry until golden brown on both sides, about 2-3 minutes per side.
  • Remove from the skillet and drain on paper towels.
  • For the chipotle aioli, in a small bowl, combine mayonnaise, chipotle peppers, lime juice, garlic powder, and salt. Stir until smooth.
  • Serve the fritters warm with a side of chipotle aioli for dipping.

Notes

  • If you don’t have fresh corn, you can use frozen corn kernels. Just make sure to thaw and drain them before using.
  • You can adjust the heat of the chipotle aioli by adding more or less chipotle peppers.
