These crispy and savory garlic corn fritters are golden brown perfection with a flavorful combination of corn, Parmesan cheese, and fresh parsley. Paired with a spicy chipotle aioli, they make a delicious appetizer or side dish that’s sure to impress.

For the Fritters:
- 1 cup corn kernels
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup milk
- 1 large egg
- Oil for frying
For the Chipotle Aioli:
- 1/2 cup mayonnaise
- 1–2 teaspoons chipotle peppers in adobo sauce (adjust to taste)
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- Salt to taste
Instructions
- In a large bowl, combine corn kernels, flour, cornmeal, Parmesan cheese, parsley, garlic, salt, and pepper.
- In a separate bowl, whisk together milk and egg. Pour over the corn mixture and stir until well combined.
- Heat oil in a large skillet over medium heat.
- Drop spoonfuls of the corn mixture into the hot oil and flatten slightly with the back of the spoon.
- Fry until golden brown on both sides, about 2-3 minutes per side.
- Remove from the skillet and drain on paper towels.
- For the chipotle aioli, in a small bowl, combine mayonnaise, chipotle peppers, lime juice, garlic powder, and salt. Stir until smooth.
- Serve the fritters warm with a side of chipotle aioli for dipping.
Notes
- If you don’t have fresh corn, you can use frozen corn kernels. Just make sure to thaw and drain them before using.
- You can adjust the heat of the chipotle aioli by adding more or less chipotle peppers.
