Ingredients
For the Garlic Parmesan Sauce:
-
4 tbsp butter
-
3 tbsp Parmigiano Reggiano (or Parmesan), grated
-
4 cloves garlic, chopped
-
1 pinch red pepper flakes (optional)
-
1 tbsp lemon juice
-
1 tbsp fresh parsley, chopped
For the Grilled Chicken:
-
1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
-
1 tsp Cajun seasoning (or your preferred blend)
Instructions
-
Marinate the Chicken
Toss chicken pieces with Cajun seasoning. Let sit while preparing the sauce or up to 30 minutes for more flavor. -
Make the Garlic Parmesan Sauce
In a small saucepan over medium heat, melt the butter. Add garlic and red pepper flakes and sauté for 1–2 minutes until fragrant. Stir in parmesan, lemon juice, and parsley. Remove from heat. -
Grill the Chicken
Preheat grill or grill pan to medium-high. Grill chicken pieces for 3–4 minutes per side or until fully cooked and lightly charred. -
Toss in Sauce
Transfer grilled chicken to a large bowl. Pour garlic parmesan sauce over the top and toss to coat evenly. -
Serve
Garnish with extra parmesan and parsley. Serve hot on its own, in wraps, or over pasta or salad.
Notes
For a milder flavor, reduce Cajun seasoning and skip red pepper flakes.
Great on skewers for grilling and serving at parties.
You can also bake the chicken at 400°F for 20–22 minutes if grilling isn’t an option.
Use freshly grated parmesan for best results.
