Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup unsweetened cocoa powder
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 tablespoon green food coloring
  • 1/2 teaspoon white vinegar
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cocoa powder.
  • In a separate bowl, mix the sugar, oil, buttermilk, egg, food coloring, vinegar, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cupcakes to cool completely before frosting them with your favorite frosting.

Notes

  • For extra flavor, you can add a touch of almond extract or cream cheese frosting on top of these cupcakes.
  • Be careful not to overfill the cupcake liners, as the batter will rise during baking.
