Instructions
- Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
- In a medium bowl, whisk together the flour, baking soda, salt, and cocoa powder.
- In a separate bowl, mix the sugar, oil, buttermilk, egg, food coloring, vinegar, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cupcakes to cool completely before frosting them with your favorite frosting.
Notes
- For extra flavor, you can add a touch of almond extract or cream cheese frosting on top of these cupcakes.
- Be careful not to overfill the cupcake liners, as the batter will rise during baking.
