  • For the Grilled Chicken:

    • 4 boneless, skinless chicken breasts
    • 2 tablespoons olive oil
    • 1 tablespoon lime juice
    • 1 teaspoon chili powder
    • 1 teaspoon cumin

    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • Salt and pepper to taste
  • For the Rice:

    • 1 cup long-grain white rice (or brown rice)
    • 2 cups water or chicken broth
    • 1/2 teaspoon salt
    • 1 tablespoon lime juice
    • 1 tablespoon chopped cilantro (optional)
  • For the Beans:

    • 1 can (15 ounces) black beans, drained and rinsed
    • 1 teaspoon cumin
    • 1/2 teaspoon chili powder
    • 1 tablespoon olive oil
    • Salt and pepper to taste
  • For the Toppings:

    • 1 avocado, sliced
    • 1/2 cup salsa (or pico de gallo)
    • 1/4 cup shredded cheese (cheddar or Mexican blend)
    • Fresh cilantro, chopped
    • Lime wedges
    • Sour cream or Greek yogurt (optional)
    • Jalapeño slices (optional)

Instructions

  • Marinate the Chicken:

    • In a bowl, mix the olive oil, lime juice, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper. Coat the chicken breasts in the marinade and refrigerate for at least 20 minutes, or up to 1 hour for more flavor.
  • Cook the Rice:

    • In a saucepan, combine the rice, water (or chicken broth), and salt. Bring to a boil. Once boiling, cover, reduce the heat to low, and simmer for 15-18 minutes (or according to rice package instructions). Once cooked, fluff the rice with a fork and stir in lime juice and chopped cilantro for added flavor.
  • Prepare the Beans:

    • Heat olive oil in a medium skillet over medium heat. Add the black beans, cumin, chili powder, salt, and pepper. Stir and cook for 3-4 minutes until heated through and the flavors are well combined.
  • Grill the Chicken:

    • Preheat a grill or grill pan to medium-high heat. Grill the marinated chicken for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Let the chicken rest for 5 minutes, then slice it thinly.
  • Assemble the Burrito Bowls:

    • Start with a base of rice in each bowl. Add a portion of seasoned black beans and top with sliced grilled chicken. Add your choice of toppings, such as sliced avocado, salsa, shredded cheese, fresh cilantro, lime wedges, and sour cream or Greek yogurt (if using).

 

  • Serve:

    • Serve the bowls immediately and enjoy the fresh, flavorful combination of grilled chicken, rice, beans, and vibrant toppings!
