  • Author: Sarah
  • Total Time: 1 hour 15 minutes
  • Yield: 4 sandwiches 1x

Description

A delicious twist on the classic Cuban sandwich, this grilled mojo chicken version combines the tangy flavors of Mojo marinade with savory Swiss cheese, ham, pickles, and mustard, all pressed into a crispy, warm sandwich roll. Perfect for a satisfying lunch or dinner.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup Mojo marinade
  • 4 slices Swiss cheese
  • 8 slices ham
  • 8 slices pickles
  • 4 sandwich rolls
  • Mustard, to taste

Instructions

  • Marinate the chicken breasts in Mojo marinade for at least 1 hour.
  • Grill the chicken breasts over medium heat until fully cooked, about 6-8 minutes per side.
  • Once grilled, set the chicken aside.
  • Assemble the sandwiches by layering Swiss cheese, ham, pickles, grilled chicken, and mustard on the sandwich rolls.
  • Press the sandwiches in a panini press or grill until the cheese is melted and the bread is crispy, about 3-5 minutes.
  • Serve the sandwiches hot and enjoy!

Notes

  • If you don’t have a panini press, you can grill the sandwiches in a skillet, pressing them with a heavy pan or spatula.
  • Mojo marinade is a key ingredient for authentic Cuban flavor. You can find it at most grocery stores or make your own using citrus, garlic, and herbs.
  • Prep Time: 1 hour (marination time)
  • Cook Time: 15 minutes
