2 tablespoons olive oil
-
1 teaspoon paprika
-
1 teaspoon cumin
-
Salt and pepper, to taste
-
¼ cup beef broth or water (optional)

Chopped green onions, for garnish
Instructions
-
Sauté Aromatics
Heat olive oil in a large skillet or Dutch oven over medium heat. Add chopped onion and garlic; sauté for 2–3 minutes until fragrant. -
Cook Beef
Add ground beef and cook until browned, about 5–7 minutes. Break it up with a spoon as it cooks. -
Add Vegetables & Seasoning
Stir in diced potatoes and red bell pepper. Season with paprika, cumin, salt, and pepper. Mix well to combine. -
Simmer
Add ¼ cup beef broth or water if needed to prevent sticking. Cover and simmer for 15–20 minutes, or until the potatoes are tender. -
Finish & Serve
Uncover and cook a few extra minutes to reduce moisture if needed. Adjust seasoning to taste. Garnish with chopped green onions and serve hot.
Notes
Make it cheesy: Top with shredded cheddar and broil for 2–3 minutes for a cheesy finish.
Veggie boost: Add peas, spinach, or corn for more color and nutrients.
Spice it up: Add a pinch of cayenne or use hot paprika for extra heat.
Storage: Refrigerate leftovers for up to 3 days. Reheat in a skillet or microwave.
