  • Author: Sarah
  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Description

This Ground Beef Stroganoff is a creamy, comforting, and budget-friendly twist on the classic dish. Made with savory ground beef, egg noodles, and a rich homemade sauce finished with sour cream, it’s the perfect weeknight meal that comes together in just 30 minutes. Family-approved and endlessly adaptable!

Ingredients

Scale
  • 6 oz egg noodles

  • 1 lb ground beef

  • ¼ cup butter

  • ¼ cup all-purpose flour

  • 1 cup beef broth

  • 1¼ cup milk

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • ¾ tsp salt

  • ¼ cup sour cream

Instructions

  1. Cook the Noodles:
Bring a pot of salted water to a boil. Cook egg noodles according to package instructions. Drain and set aside.

  2. Cook the Beef:
In a large skillet over medium heat, cook the ground beef, breaking it apart until browned and no pink remains (6–8 minutes). Drain excess fat and set beef aside.

  3. Make the Roux:
In the same skillet, melt butter over medium heat. Sprinkle in flour and whisk continuously for about 2 minutes to form a smooth roux.

  4. Create the Sauce:
Slowly whisk in the beef broth, stirring constantly to prevent lumps. Cook for 3–4 minutes until the sauce begins to thicken.

  5. Add Milk:
Gradually add milk while whisking. Continue to stir over medium heat until the sauce thickens and becomes smooth (5–7 minutes).

  6. Season the Sauce:
Stir in garlic powder, onion powder, salt, and pepper.

  7. Combine Everything:
Reduce heat to low. Add cooked beef and noodles to the sauce, stirring gently to combine and heat through.

  8. Finish with Sour Cream:
Stir in sour cream until fully incorporated. Serve hot and garnish with fresh herbs if desired.

Notes

Make It Mushroomy: Add 1 cup sautéed mushrooms to the sauce for a more traditional stroganoff flavor.

Storage: Store leftovers in an airtight container in the fridge for up to 4 days. Freeze for up to 3 months. Reheat with a splash of broth or milk to restore creaminess.

Swap Proteins: Use ground turkey or chicken for a lighter option, or try diced steak for a classic version.

Gluten-Free: Use gluten-free noodles or serve over mashed potatoes or rice.

Low-Carb Version: Serve over roasted veggies or cauliflower mash instead of pasta.
