  • 1 lb ground turkey

  • 2 medium sweet potatoes, peeled and thinly sliced or cubed

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 1 red bell pepper, diced

  • 12 cups spinach or kale, chopped

  • 2 tbsp olive oil

  • 2 tbsp tomato paste (or ½ cup diced tomatoes)

  • ½ cup low-sodium chicken or vegetable broth

  • 1 tsp paprika

  • ½ tsp dried thyme

  • ½ tsp oregano

  • Salt and pepper, to taste

  • Optional: 1 cup shredded cheese (cheddar, mozzarella, or feta)

  • Optional toppings: breadcrumbs, chopped parsley, green onions


Instructions

  • Preheat Oven: Set oven to 375°F (190°C).

  • Sauté Veggies: In a large skillet, heat olive oil. Sauté onion, garlic, and bell pepper until soft.

  • Cook Turkey: Add ground turkey, breaking it up with a spoon. Cook until browned.

  • Add Tomato & Spices: Stir in tomato paste, broth, paprika, thyme, oregano, salt, and pepper. Simmer for 2–3 minutes.

  • Add Greens: Mix in spinach or kale until wilted.

  • Assemble: Lightly grease a baking dish. Layer sweet potatoes on the bottom. Spoon turkey mixture on top. Add cheese if using.

  • Bake: Cover with foil and bake for 25–30 minutes. Remove foil and bake 10–15 minutes more, until bubbly and sweet potatoes are fork-tender.

 

  • Cool & Serve: Let rest 5–10 minutes before serving. Garnish with optional toppings.

Notes

Pre-cook sweet potatoes to shorten baking time.
