  • 2 cups cooked chicken, diced or shredded

  • ½ cup green onions, sliced

  • 1 avocado, diced
  • ¼ cup sunflower seeds or pine nuts, toasted

For the Dressing:

  • ½ cup plain Greek yogurt
  • ¼ cup mayonnaise
  • 2 tablespoons lemon juice

Instructions

 

  1. In a large bowl, combine the cooked chicken, celery, green onions, cilantro, parsley, avocado, and toasted sunflower seeds (or pine nuts).
  2. In a separate small bowl, whisk together the Greek yogurt, mayonnaise, and lemon juice until smooth.
  3. Pour the dressing over the salad and toss everything gently to coat.
  4. Season with salt and pepper to taste, and serve immediately.
  5. Optionally, chill in the fridge for 30 minutes for a colder dish.
