Instructions

  • Prepare the Dough:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
    • In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy (about 2-3 minutes).
    • Add the egg, vanilla extract, and almond extract (if using). Beat until well combined.
    • Gradually add the dry ingredients to the wet mixture, mixing until the dough comes together.
  • Roll Out the Dough:
    • Turn the dough out onto a lightly floured surface. Roll it out to about 1/8 inch thickness.
    • Use a heart-shaped cookie cutter to cut out cookies. Use a smaller heart cutter (or any shape you like) to cut out the center of half of the cookies, leaving a “window” for the jam to show through.
  • Bake the Cookies:
    • Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are lightly golden. The cookies will firm up as they cool, so make sure not to overbake them.
    • Once baked, allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • Assemble the Cookies:
    • Once the cookies are cool, spread about a teaspoon of jam onto the solid heart-shaped cookies (those without the center cut-out).
    • Carefully place the cut-out heart cookies on top of the jam-covered cookies, creating a sandwich. The jam should be visible through the “window.”
