This Hobo Casserole is an easy, comforting baked dish featuring savory ground beef layered with thinly sliced potatoes and topped with melty cheddar and Parmesan cheese.   • 1 lb ground beef

  • 1 tbsp olive oil

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 45 medium potatoes, thinly sliced

  • 1 ½ cups shredded cheddar cheese

  • ½ cup grated Parmesan cheese

  • 1 tsp dried Italian seasoning

  • ½ tsp paprika

  • Salt and pepper to taste

  • ½ cup beef broth or water

  • ¼ cup milk (optional, for creaminess)

  • Fresh parsley for garnish (optional)


Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.

  • Heat olive oil in a large skillet over medium heat. Add ground beef and cook, breaking apart with a spoon, until browned and cooked through, about 5–7 minutes. Drain excess fat if desired.

  • Add chopped onion and minced garlic to the skillet with beef. Cook 3–4 minutes until onion is soft and translucent.

  • Spread cooked beef mixture evenly in the bottom of the prepared baking dish.

  • Layer thinly sliced potatoes evenly over the beef. Season potatoes with salt, pepper, Italian seasoning, and paprika.

  • Sprinkle shredded cheddar and grated Parmesan cheese over the potatoes.

  • Pour beef broth (or water) around the edges of the casserole to keep potatoes moist during baking. Optionally drizzle milk over the top for extra creaminess.

  • Cover casserole with aluminum foil and bake for 30 minutes.

  • Remove foil and bake an additional 15–20 minutes until potatoes are tender and cheese is bubbly and golden.

 

  • Garnish with fresh parsley if desired. Serve hot.

Notes

Brown the beef well and drain excess fat for a leaner dish.

Thinly slicing potatoes ensures even cooking.

Use beef broth for richer flavor; water works fine as a substitute.

Adding milk makes the casserole creamier but is optional.

Fresh parsley adds a fresh finish.
