  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 tbsp tomato paste

  • 2 tsp paprika

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • 2 cups beef broth or stock

  • 1 cup milk

  • 2 cups elbow macaroni (or other small pasta)

  • 1 ½ cups shredded cheddar cheese

  • 1 tbsp olive oil or butter

  • Optional: ¼ cup sour cream or 2 tbsp cream cheese for extra creaminess

  • Optional: chopped parsley, for garnish


Instructions

  • Cook the Beef:
    In a large skillet or Dutch oven, heat oil over medium heat. Add diced onion and sauté until soft. Stir in garlic and cook for 30 seconds. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.

  • Add Tomato Paste and Seasoning:
    Stir in tomato paste, paprika, Italian seasoning, salt, and pepper. Cook for 1–2 minutes to let the flavors deepen.

  • Add Pasta and Liquids:
    Pour in the beef broth and milk. Stir in the uncooked pasta. Bring to a boil, then reduce heat and simmer uncovered, stirring occasionally, until pasta is tender (10–12 minutes). Add more broth if needed.

  • Stir in Cheese:
    Once the pasta is cooked and most of the liquid is absorbed, stir in shredded cheddar cheese. Mix until melted and creamy. Add sour cream or cream cheese, if using, for extra richness.

 

  • Taste and Serve:
    Adjust seasoning as needed. Serve hot, garnished with chopped parsley or extra cheese if desired.

Notes

Freshly shredded cheese melts best and gives the creamiest texture.

Stir occasionally while simmering to prevent sticking.

Add a splash of milk when reheating to loosen up the sauce.

For cheeseburger flavor, add a spoonful of ketchup and mustard in Step 2.

Stir in spinach, peas, or chopped bell peppers for a veggie boost.
