  • 1 lb ground beef or ground turkey

  • 1 medium onion, chopped

  • 3 cloves garlic, minced

  • 1 bell pepper, chopped

  • 1 (15 oz) can diced tomatoes

  • 2 tbsp tomato paste

  • 1 (15 oz) can kidney beans, drained and rinsed

  • 1 (15 oz) can black beans or pinto beans, drained and rinsed

  • 1 cup beef broth or water

  • 2 tbsp chili powder

  • 1 tsp ground cumin

  • 1 tsp paprika

  • ½ tsp dried oregano

  • 1 tsp salt

  • ½ tsp black pepper


Instructions

  1. Brown the Meat: In a large pot or Dutch oven, brown the ground meat over medium heat until fully cooked. Drain excess fat if needed.

  2. Sauté Vegetables: Add chopped onions, garlic, and bell peppers. Cook until softened and fragrant, about 5 minutes.

  3. Tomato Base: Stir in the tomato paste and cook for 1–2 minutes.

  4. Combine Ingredients: Add diced tomatoes, beans, broth (or water), and spices. Stir to mix well.

  5. Simmer: Bring to a boil, then reduce heat. Simmer uncovered for 30–45 minutes, stirring occasionally.

  6. Adjust & Serve: Taste and adjust seasoning. Serve hot with your favorite toppings.

Notes

For smoky depth, use fire-roasted tomatoes or smoked paprika.

Add a square of dark chocolate or a dash of cinnamon for a flavor twist.

For vegetarian version, skip the meat and add more beans or lentils.
