  • 1 tbsp olive oil

  • 1 lb ground beef or ground turkey

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 bell pepper, chopped

  • 1 (15 oz) can kidney beans, drained and rinsed

  • 1 (15 oz) can black beans, drained and rinsed

  • 1 (28 oz) can crushed tomatoes

  • 2 tbsp tomato paste

  • 1 cup beef or chicken broth

  • 2 tbsp chili powder

  • 1 tsp ground cumin

  • 1 tsp paprika

  • 1 tsp dried oregano

  • 1 tsp salt (adjust to taste)

  • 1/2 tsp black pepper

  • Optional toppings: shredded cheese, sour cream, green onions, jalapeños


Instructions

  • Sauté Aromatics: In a large pot or Dutch oven, heat olive oil over medium heat. Add diced onion and garlic, cooking until softened (2–3 minutes).

  • Brown the Meat: Add ground beef or turkey. Cook until browned, breaking it up with a spoon (5–7 minutes).

  • Add Veggies: Stir in bell pepper and cook for 3–4 minutes until softened.

  • Spice It Up: Add tomato paste, chili powder, cumin, paprika, oregano, salt, and pepper. Stir to coat the meat and vegetables evenly.

  • Add Beans and Tomatoes: Pour in crushed tomatoes, broth, kidney beans, and black beans. Stir well to combine.

  • Simmer: Bring to a boil, then reduce heat to low. Simmer uncovered for 30–45 minutes, stirring occasionally, until thickened.

 

  • Adjust & Serve: Taste and adjust seasoning as needed. Serve hot with desired toppings.

Notes

Add a pinch of sugar to balance the acidity of the tomatoes.

For spicier chili, include cayenne pepper, diced jalapeños, or hot sauce.

Use plant-based crumbles or lentils for a vegetarian version.

Make it thicker by mashing some of the beans or simmering longer.
