Description

This Homemade Hamburger Helper is a comforting, one-pot wonder made with lean ground beef, elbow macaroni, cheddar cheese, and flavorful spices. A quick and easy weeknight dinner that’s way better than the boxed version—creamy, cheesy, and ready in under 30 minutes!


Ingredients

  • 1 pound extra lean ground beef

  • ½ medium onion, chopped

  • 2 heaping tablespoons tomato paste

  • ½ teaspoon garlic powder

  • ½ teaspoon chili powder

  • 3 cups beef broth

  • 1 cup uncooked elbow macaroni

  • 2 cups freshly grated cheddar cheese

  • Salt & pepper, to taste


Instructions

  • Brown the Meat
    In a soup pot over medium-high heat, add the ground beef and chopped onion. Cook for 7–10 minutes, breaking up the meat as it browns. Drain excess fat if necessary.

  • Add Seasonings
    Stir in tomato paste, garlic powder, and chili powder until combined.

  • Cook Pasta
    Add beef broth and increase heat to bring to a boil. Stir in macaroni, reduce to a rapid simmer, and cook uncovered for 13–15 minutes, stirring occasionally, until pasta is tender and liquid is mostly absorbed.

  • Add Cheese
    Remove from heat and stir in the grated cheddar. Season with salt and pepper as needed.

 

  • Let It Sit
    Let the dish rest for a couple minutes to thicken slightly before serving.

Notes

Portions: Serves 4–6 depending on appetite.

Liquid Adjustments: If the liquid cooks off too quickly, add more broth or water ½ cup at a time.

Cheese Tip: Freshly grated cheese melts smoother than pre-shredded.

Customization: Add peas, bell peppers, or swap beef for ground turkey for a lighter version.
