For the cookies:

  • 1 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups old-fashioned oats

For the filling:

  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 1 tablespoon heavy cream

Instructions

 

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, combine the all-purpose flour, baking soda, salt, and ground cinnamon. Gradually add this dry mixture to the butter mixture, stirring until fully combined. Stir in the oats.
  4. Drop rounded spoonfuls of dough onto the prepared baking sheets. Bake for 10-12 minutes or until the edges are golden brown and the cookies are set. Allow to cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
  5. While the cookies are cooling, prepare the filling. In a medium bowl, beat the butter, powdered sugar, vanilla extract, and heavy cream until smooth and fluffy.
  6. Once the cookies are completely cool, spread a generous amount of the filling on the bottom side of half of the cookies, then top with the remaining cookies to form sandwiches.
  7. Serve and enjoy your homemade oatmeal cream pies!
