For the Cookie Dough Layer:

  • 16 Oreo cookies
  • 1/2 cup unsweetened cocoa powder

Instructions

  • Preheat the Oven
    Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper or grease it with butter.
  • Make the Cookie Dough
    In a large bowl, cream together the softened butter, light brown sugar, and granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Combine the Dry Ingredients
    In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Fold in the semi-sweet chocolate chips.
  • Prepare the Brownie Layer
    Crush the 16 Oreo cookies into bite-sized pieces and set aside. In another small bowl, sift together the unsweetened cocoa powder with a pinch of salt. Add the cocoa powder to the brownie batter and stir until smooth.
  • Layer the Brookies
    Spread the brownie batter evenly into the bottom of the prepared pan. Then, drop spoonfuls of the cookie dough on top of the brownie layer. Gently spread the dough to cover the brownies, and sprinkle the crushed Oreo cookies on top.
  • Bake
