These Honey Chipotle Chicken Bowls offer a perfect balance of sweet and smoky flavors. Tender grilled chicken is paired with a zesty avocado corn salsa, making it an ideal choice for a satisfying lunch or dinner.


Ingredients

For the Honey Chipotle Chicken:

  • 1 pound boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 chipotle chile in adobo sauce, finely chopped, plus 1 tablespoon of adobo sauce

  • Juice of 1/2 lime

  • 1 tablespoon honey

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon ground cumin

  • 1 tablespoon chopped fresh cilantro

  • Salt and freshly ground black pepper to taste

For the Avocado Corn Salsa:

  • 1 cup grilled fresh corn or defrosted frozen corn

  • 1 avocado, peeled and diced

  • 1 jalapeño, seeds and veins removed, finely diced

  • 1 tablespoon chopped cilantro

  • Juice of 1/2 lime

  • 1/2 teaspoon ground cumin

  • Salt and freshly ground black pepper to taste


Instructions

  • Marinate the Chicken: In a bowl, combine olive oil, chopped chipotle chile, adobo sauce, lime juice, honey, garlic powder, cumin, cilantro, salt, and pepper. Add chicken breasts and marinate for at least 15 minutes.

  • Prepare the Avocado Corn Salsa: In a separate bowl, mix together grilled corn, diced avocado, jalapeño, cilantro, lime juice, cumin, salt, and pepper. Set aside.

  • Cook the Chicken: Grill or pan-sear the marinated chicken breasts over medium heat until fully cooked, about 6-7 minutes per side. Let rest before slicing.

 

  • Assemble the Bowls: Place sliced chicken over a bed of rice or quinoa. Top with avocado corn salsa and serve immediately.

Notes

For added flavor, consider adding a drizzle of lime tahini dressing or a sprinkle of crumbled feta cheese.
