Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the softened butter and sugar until smooth and fluffy.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, mixing until well combined.
- Roll the dough into 1-inch balls, then roll each ball in the rainbow nonpareils to coat.
- Place the coated dough balls 2 inches apart on ungreased cookie sheets.
- Bake for 8 to 10 minutes in the preheated oven, or until the cookies are lightly golden around the edges.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
