Instructions
- In a saucepan, combine sugar, corn syrup, water, and salt. Cook over medium heat, stirring occasionally, until the mixture reaches 280°F (soft-crack stage).
- While the sugar mixture is heating, beat the egg whites in a separate bowl until stiff peaks form.
- Slowly pour the hot sugar mixture into the egg whites while beating constantly, making sure to do this carefully to avoid curdling the mixture.
- Once combined, add the vanilla extract, chopped nuts, and dried fruit. Stir gently to mix.
- Pour the nougat mixture into a greased pan and spread evenly. Allow it to cool to room temperature.
- Once cooled, cut into squares and dust with powdered sugar to prevent sticking.
