Cake:

  • 1½ cups all-purpose flour

  • 1 tsp baking powder

  • 1 tsp salt

  • ½ cup unsalted butter, softened

  • 1 cup granulated sugar

  • 2 large eggs, at room temperature

  • 1 tsp vanilla extract

  • ½ cup sour cream

  • 1 cup crushed pineapple, drained

Glaze:

  • ½ cup powdered sugar

  • 2 tbsp pineapple juice


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round or loaf pan.

  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt. Set aside.

  3. Cream Butter & Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy (about 2–3 minutes).

  4. Add Eggs & Vanilla: Beat in eggs one at a time, then add vanilla extract.

  5. Combine Wet and Dry: Add half the flour mixture, then the sour cream, then the remaining flour. Mix until just combined.

  6. Fold in Pineapple: Gently fold in the drained crushed pineapple.

  7. Bake: Pour batter into the prepared pan. Bake for 40–45 minutes or until a toothpick inserted in the center comes out clean.

  8. Make Glaze: While the cake cools slightly, whisk together powdered sugar and pineapple juice until smooth.

  9. Glaze the Cake: Drizzle glaze over the slightly warm cake. Allow to cool completely before serving.

Notes

For extra pineapple flavor, reserve some juice from the crushed pineapple and use it in the glaze.

This cake can also be made in a bundt or loaf pan—adjust baking time as needed.

Top with toasted coconut or whipped cream for a tropical twist.
