8 oz (250 g) baby bella mushrooms, sliced

1 cup (125 g) heavy cream

4 cloves garlic, chopped

½ small onion, diced

2 tbsp unsalted butter (for frying)

Instructions

Sear the Chicken
Season chicken thighs with salt and pepper. Heat butter in a large skillet over medium heat. Sear chicken on both sides until golden and cooked through (about 6–7 minutes per side). Remove from skillet and set aside. -
Sauté the Aromatics
In the same skillet, add more butter if needed. Sauté chopped onion for 2 minutes until soft, then add garlic and mushrooms. Cook until mushrooms release moisture and begin to brown, about 5–6 minutes. -
Make the Cream Sauce
Pour in the heavy cream and bring to a simmer. Stir and reduce heat to low. Let the sauce thicken slightly, about 3–4 minutes. -
Combine & Finish
Return chicken thighs to the pan and spoon sauce over the top. Simmer gently for 3–5 minutes to blend flavors.
