  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon
  • 2 cups all-purpose flour

  • 1 cup fresh blueberries

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Mix in the vanilla extract and lemon zest.
  • Gradually add the flour and salt, mixing until well combined.
  • Gently fold in the blueberries.
  • Press the dough into the prepared baking pan.
  • Bake for 35-40 minutes, or until the edges are golden brown.
  • Allow to cool before cutting into bars.

Notes

  • For extra lemon flavor, you can add a bit of lemon juice to the dough.
  • If fresh blueberries are not available, frozen blueberries can be used, but do not thaw them before folding into the dough to prevent excess moisture.
