- 2 tablespoons fresh lemon juice
- Powdered sugar, for rolling
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a separate bowl, cream together butter and sugar until light and fluffy.
- Mix in vanilla extract, lemon zest, and lemon juice.
- Gradually add dry ingredients to wet ingredients and mix until combined.
- Chill dough in the refrigerator for 30 minutes.
- Roll dough into 1-inch balls, then roll in powdered sugar to coat.
- Place on prepared baking sheet and bake for 10-12 minutes, or until edges are set.
- Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
