  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • Powdered sugar, for rolling

Instructions

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a separate bowl, cream together butter and sugar until light and fluffy.
  • Mix in vanilla extract, lemon zest, and lemon juice.
  • Gradually add dry ingredients to wet ingredients and mix until combined.
  • Chill dough in the refrigerator for 30 minutes.
  • Roll dough into 1-inch balls, then roll in powdered sugar to coat.
  • Place on prepared baking sheet and bake for 10-12 minutes, or until edges are set.
  • Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
