  • Author: Sarah
  • Total Time: 25-40 minutes (depending on chilling time)
  • Yield: About 24 cookies 1x

Description

Lemon Lavender Cookies combine the refreshing citrusy zing of lemon with the delicate floral notes of lavender for a sophisticated treat. These cookies are soft, buttery, and full of bright flavor, making them perfect for tea parties, gifting, or simply enjoying with a cup of tea. The hint of lavender makes them unique and unforgettable!

Ingredients

Scale
  • 1 1/2 cups all-purpose flour

  • 1 teaspoon dried lavender buds (culinary grade)

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup unsalted butter, softened

  • 1 cup granulated sugar

  • 1 large egg

  • 1 tablespoon lemon zest (from about 1 lemon)

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon vanilla extract

  • 1/4 cup sanding sugar (for rolling, optional)

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.

  2. Prepare the Dry Ingredients:
In a medium bowl, whisk together the flour, dried lavender buds, baking soda, and salt. Set aside.

  3. Cream the Butter and Sugar:
In a large bowl, beat together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. This will help create a tender texture in the cookies.

  4. Add the Wet Ingredients:
Add the egg, lemon zest, lemon juice, and vanilla extract to the butter mixture. Beat until well combined.

  5. Combine Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix the dough.

  6. Chill the Dough (Optional, but Recommended):
If you have time, chill the dough in the refrigerator for 15-30 minutes to make the dough easier to handle and to help the cookies maintain their shape while baking.

  7. Form the Cookies:
Scoop out tablespoon-sized portions of dough and roll them into balls. Roll each ball in sanding sugar (if using) for a sparkling, sugary finish.

  8. Bake the Cookies:
Place the dough balls on the prepared baking sheets, spacing them about 2 inches apart. Flatten each cookie slightly with your fingers or the back of a spoon. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.

  9. Cool and Serve:
Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely. Enjoy with a cup of tea or coffee!

Notes

  • Make sure to use culinary-grade lavender buds. Lavender from craft stores or floral shops may not be safe for consumption.

  • If you prefer a stronger lavender flavor, you can increase the amount of lavender buds by 1/2 teaspoon, but be careful not to overpower the lemon flavor.

  • These cookies can be stored in an airtight container at room temperature for up to 1 week.
