Instructions

Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and cook until softened, about 5–7 minutes.

Add Garlic and Herbs: Stir in minced garlic and rosemary sprigs, cooking until fragrant, about 1 minute.

Cook Chicken: Add chicken pieces and brown lightly on all sides, about 5 minutes.

Simmer Soup: Pour in chicken broth, add bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer until chicken is cooked through, about 20 minutes.
