  • 1 lb (450g) boneless, skinless chicken breasts or thighs

  • 2 tablespoons olive oil

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • 6 cups (1.4L) chicken broth or stock

  • 23 sprigs fresh rosemary

  • Zest of 1 lemon

  • 2 tablespoons fresh lemon juice

  • 1 bay leaf

  • Salt and black pepper, to taste

  • Optional: cooked rice, orzo, or noodles


Instructions

  • Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery, and cook until softened, about 5–7 minutes.

  • Add Garlic and Herbs: Stir in minced garlic and rosemary sprigs, cooking until fragrant, about 1 minute.

  • Cook Chicken: Add chicken pieces and brown lightly on all sides, about 5 minutes.

  • Simmer Soup: Pour in chicken broth, add bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer until chicken is cooked through, about 20 minutes.

  • Finish with Lemon: Remove chicken, shred it, then return to the pot. Stir in lemon zest and juice.

 

  • Add Optional Ingredients: Add cooked rice, noodles, or extra vegetables if desired, and simmer a few more minutes to combine flavors.

Notes

Use fresh rosemary for best flavor.

Avoid overcooking chicken to keep it tender.

Adjust lemon juice to taste for brightness.

Skim fat for a lighter broth.

Store leftovers in airtight containers in the fridge or freeze for longer storage.
