  • 2 lbs ground beef (80/20 recommended)

  • 1 packet (1 oz) Lipton Onion Soup Mix (or any dry onion soup mix)

  • 2 large eggs

  • ¾ cup plain dry breadcrumbs

  • ¾ cup milk (whole or 2%)

  • ¼ cup ketchup (plus more for topping)

  • Optional: 1 tbsp Worcestershire sauce

  • Optional: ½ tsp garlic powder or onion powder

  • Optional: Fresh parsley, for garnish


Instructions

  • Preheat Oven: Preheat oven to 350°F (175°C).

  • Mix Ingredients: In a large bowl, combine ground beef, soup mix, eggs, breadcrumbs, milk, ketchup, and any optional seasonings. Mix gently until just combined—do not overmix.

  • Shape Meatloaf: Shape the mixture into a loaf and place it in a loaf pan or on a lined baking sheet.

  • Top & Bake: Spread a thin layer of ketchup over the top. Bake uncovered for 55–60 minutes, or until internal temperature reaches 160°F (71°C).

 

  • Rest & Serve: Let the meatloaf rest for 10 minutes before slicing. Garnish with parsley if desired.

Notes

For extra moisture, avoid overcooking and use beef with some fat content.

Add finely chopped vegetables like carrots or celery for extra texture and nutrition.

Use a meat thermometer to ensure doneness.
