  • 4 cups chicken broth
  • 1 1/2 cups heavy cream (or coconut milk for a dairy-free version)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional for a bit of heat)
  • Salt and freshly ground black pepper to taste
  • 1 cup grated Parmesan cheese (optional, for added creaminess)
  • 1/2 cup spinach or kale, chopped (optional for extra greens)

 

  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Chicken:
    Heat olive oil in a large pot or Dutch oven over medium heat. Add the diced chicken and cook until browned and cooked through (about 6-8 minutes). Remove chicken from the pot and set it aside.

  • Sauté the Aromatics:
    In the same pot, add the diced onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.

  • Add the Sun-Dried Tomatoes:
    Stir in the chopped sun-dried tomatoes and cook for 2 minutes, allowing them to release their flavors.

  • Pour in the Broth and Cream:
    Add the chicken broth, heavy cream, dried basil, oregano, red pepper flakes, and salt and pepper to the pot. Bring the soup to a simmer and let it cook for 10-15 minutes, allowing the flavors to meld together.

  • Add the Chicken and Spinach:
    Return the cooked chicken to the pot. If using, stir in the spinach or kale and let it cook for another 5 minutes until the greens are wilted.

  • Finish with Parmesan:
    Stir in the grated Parmesan cheese, if using, and let the soup simmer for a few more minutes until the cheese is melted and the soup has thickened slightly.

 

  • Serve:

  • For a dairy-free version, omit the Parmesan and substitute the heavy cream with coconut milk or a dairy-free cream alternative.
