    • ½ cup sun-dried tomatoes, chopped
    • 1 cup heavy cream
    • 1 cup chicken broth
    • ½ cup Parmesan cheese, grated
  • For Garnish:
    • Fresh basil or parsley, chopped
    • Lemon juice and zest for a bright, fresh finish

Instructions

  • Prepare the Salmon:
    Pat the salmon fillets dry with paper towels and season both sides with salt and pepper. Heat olive oil and butter in a large skillet over medium-high heat.
  • Sear the Salmon:
    Once the skillet is hot, add the salmon fillets skin-side down (if using skin-on). Cook for 4-5 minutes per side, or until the salmon is golden brown and cooked to your desired doneness. Remove the salmon from the pan and set aside.
  • Make the Creamy Sauce:
    In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the chopped sun-dried tomatoes and cook for another minute. Then, pour in the chicken broth and bring to a simmer, scraping any bits from the bottom of the pan.
  • Add the Cream and Parmesan:
    Lower the heat and stir in the heavy cream and grated Parmesan cheese. Let the sauce simmer for 3-4 minutes, or until it thickens slightly.
  • Finish the Dish:
    Return the salmon fillets to the skillet, spooning some of the sauce over the top. Cook for another 1-2 minutes to reheat the salmon and allow the flavors to meld.
  • Garnish and Serve:
    Remove the skillet from the heat and squeeze fresh lemon juice over the top of the salmon. Garnish with freshly chopped basil or parsley and a bit of lemon zest for a bright, fresh finish.
