Ingredients
Scale
For the Meatloaf:
- 1 lb ground beef (80/20 blend)
- 1 cup fresh cremini mushrooms (finely chopped)
- 2 cloves garlic (minced)
- 1 small onion (finely chopped)
- 1 cup breadcrumbs
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- 1 egg (optional, for binding)
For the Mushroom Gravy:
- 1 cup fresh cremini mushrooms (sliced)
- 2 cloves garlic (minced)
- 1 small onion (chopped)
- 2 cups beef broth
- Salt and pepper to taste
- 2 tbsp flour (optional, for thickening)
Instructions
For the Meatloaf:
- Prep Meat: Let the ground beef come to room temperature.
- Chop Vegetables: Finely chop the onion and mushrooms, and mince the garlic.
- Mix Meatloaf: In a large bowl, gently combine the ground beef, breadcrumbs, Worcestershire sauce, garlic, chopped mushrooms, and onions.
- Test Seasoning: Fry a small patty from the mixture and test the seasoning. Adjust with salt and pepper as needed.
- Shape and Bake: Shape the meat mixture into a loaf with a slight dome on top. Place it on a baking sheet or in a loaf pan. Bake at 350°F (175°C) for 45-50 minutes, or until the internal temperature reaches 160°F (71°C).
- Rest the Meatloaf: Let the meatloaf rest for 15 minutes after baking to set before slicing.
For the Mushroom Gravy:
- Sauté Mushrooms: In a pan, sauté the sliced mushrooms, garlic, and onion over medium heat until the mushrooms turn golden brown and the onions become soft, about 5-7 minutes.
- Add Liquid: Pour in the beef broth and simmer for 10 minutes. If you prefer a thicker gravy, stir in flour (mix the flour with a little water first to avoid lumps).
- Simmer and Season: Let the gravy simmer until it thickens. Season with salt and pepper to taste.
Serve:
Serve slices of meatloaf topped with mushroom gravy. For a complete meal, pair with mashed potatoes and roasted Brussels sprouts.
