Description

These Mediterranean Baked Feta Eggs are a vibrant, flavorful dish featuring creamy feta, sunny eggs, and a medley of fresh vegetables. With a touch of olive oil, herbs, and red pepper flakes, this dish is perfect for a healthy breakfast or brunch.


Ingredients

  • 6 large eggs

  • 2 cups cherry or grape tomatoes

  • 1 red bell pepper, chopped

  • 1/2 red onion, chopped

  • 3 garlic cloves, minced

  • 8 oz feta cheese

  • 4 tbsp olive oil

  • 1 tsp dried oregano

  • 1 tsp sea salt

  • 1/2 tsp dried thyme

  • 1/2 tsp ground black pepper

  • 1/2 tsp red pepper flakes

  • 1 cup baby spinach

  • Chopped fresh chives (for garnish)


Instructions

  • Preheat the Oven:
    Preheat your oven to 375°F (190°C).

  • Prepare the Vegetables:
    In a large baking dish, combine the cherry tomatoes, chopped red bell pepper, chopped red onion, and minced garlic. Drizzle with 2 tablespoons of olive oil and toss to coat.
    Place the block of feta cheese in the center of the vegetables.

  • Season the Dish:
    Sprinkle the dried oregano, sea salt, thyme, black pepper, and red pepper flakes over the vegetables and feta cheese.

  • Bake:
    Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the feta cheese is soft and slightly golden, and the vegetables are tender.

  • Add the Eggs and Spinach:
    Remove the dish from the oven. Crack the eggs on top of the baked feta and vegetables. Sprinkle the baby spinach around the eggs. Drizzle the remaining 2 tablespoons of olive oil over the top.
    Return the dish to the oven and bake for an additional 10-15 minutes, or until the eggs are cooked to your desired level (runny or fully set).

 

  • Serve:
    Remove from the oven, sprinkle with chopped fresh chives, and serve immediately.

Notes

  • For added protein, you can top the dish with grilled chicken or chickpeas.

  • If you prefer a spicier version, add more red pepper flakes or a dash of hot sauce.
