Ingredients

6 large eggs

2 cups cherry or grape tomatoes

1 red bell pepper, chopped

1/2 red onion, chopped

3 garlic cloves, minced

8 oz feta cheese

4 tbsp olive oil

1 tsp dried oregano

1 tsp sea salt

1/2 tsp dried thyme

1/2 tsp ground black pepper

1/2 tsp red pepper flakes

1 cup baby spinach

Chopped fresh chives (for garnish)
Instructions

Preheat the Oven:
Preheat your oven to 375°F (190°C). -
Prepare the Vegetables:
In a large baking dish, combine the cherry tomatoes, chopped red bell pepper, chopped red onion, and minced garlic. Drizzle with 2 tablespoons of olive oil and toss to coat.
Place the block of feta cheese in the center of the vegetables. -
Season the Dish:
Sprinkle the dried oregano, sea salt, thyme, black pepper, and red pepper flakes over the vegetables and feta cheese. -
Bake:
Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the feta cheese is soft and slightly golden, and the vegetables are tender. -
Add the Eggs and Spinach:
Remove the dish from the oven. Crack the eggs on top of the baked feta and vegetables. Sprinkle the baby spinach around the eggs. Drizzle the remaining 2 tablespoons of olive oil over the top.
Return the dish to the oven and bake for an additional 10-15 minutes, or until the eggs are cooked to your desired level (runny or fully set).

Serve:
Remove from the oven, sprinkle with chopped fresh chives, and serve immediately.
