Ingredients

2 large eggs, at room temperature

1/2 teaspoon salt

4 and 1/2 cups (563g) all-purpose flour or bread flour (spooned & leveled), plus more for dusting/rolling
For the Filling

1/2 cup (8 Tbsp; 113g) unsalted butter, softened to room temperature

1/4 cup (60ml) pure maple syrup

1/4 cup (50g) granulated sugar

1 tablespoon ground cinnamon

1 cup cooked and crumbled bacon (about 6 slices)
For the Maple Icing

1 and 1/2 cups (180g) confectioners’ sugar

2 tablespoons (30ml) pure maple syrup

2 tablespoons (30ml) whole milk
Instructions
Make the Dough

Activate the Yeast: In a large bowl, combine warm milk and 1/3 cup of sugar. Stir to dissolve. Sprinkle the yeast over the milk mixture, stir, and let sit for 5-10 minutes until foamy.

Mix the Dough: Add the remaining 1/3 cup of sugar, butter, eggs, and salt into the yeast mixture. Stir to combine. Gradually add the flour, 1 cup at a time, mixing well after each addition until the dough begins to form a soft ball.

Knead the Dough: Turn the dough out onto a floured surface and knead for 8-10 minutes until smooth and elastic.

Make the Filling
