Ingredients

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 3/4 cup finely chopped nuts (such as walnuts, pecans, or almonds)
  • Additional powdered sugar (for rolling)

Instructions

  • In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.
  • Add the salt, vanilla extract, and flour to the mixture, and mix until well combined.
  • Stir in the chopped nuts until evenly distributed.
  • Shape the dough into 1-inch balls and place them on ungreased baking sheets.
  • Bake at 400°F (200°C) for 10-12 minutes, or until the cookies are set but not brown.
  • While still warm, roll the cookies in additional powdered sugar to coat them completely.
  • Let the cookies cool on wire racks before storing in an airtight container.

Notes

  • Feel free to use your preferred nuts; pecans or walnuts are especially popular in this recipe.
  • Be careful not to overbake the cookies, as they should not brown. They should remain pale and soft.
  • If you prefer a sweeter finish, you can roll the cookies in powdered sugar a second time once they’ve cooled.
