Description

Mississippi Mud Potatoes are rich, cheesy, and loaded with flavor!   • 6 cups potatoes, peeled and diced

  • 1 cup cheddar cheese, shredded

  • ¾ cup mayonnaise

  • 1 cup cooked bacon, crumbled

  • 3 tsp garlic, minced

  • ½ cup onion, chopped


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Mix Ingredients: In a large bowl, combine diced potatoes, shredded cheese, mayonnaise, bacon, garlic, and onion. Mix until well coated.

  3. Bake: Spread the mixture evenly in the prepared baking dish. Cover with foil and bake for 45 minutes.

  4. Uncover & Finish Baking: Remove the foil and bake for an additional 15–20 minutes, or until the top is golden and the potatoes are fork-tender.

  5. Serve: Let cool slightly and serve warm as a hearty side dish.

Notes

Add chopped green onions or parsley for freshness.

You can substitute sour cream or Greek yogurt for part of the mayo for a tangier flavor.
