This No Bake Chocolate Eclair Cake is an easy and delicious dessert that mimics the taste of a classic eclair, without the need for baking! With layers of creamy vanilla pudding, graham crackers, and a rich chocolate topping, it’s a perfect make-ahead dessert for any occasion.

- 1 box graham crackers (about 14–16 crackers)
- 2 (3.4 oz) packages instant vanilla pudding
- 3 cups milk
- 1 (8 oz) container Cool Whip (or whipped topping)
- 1 can chocolate frosting (about 16 oz)
Instructions
- In a medium bowl, combine the instant vanilla pudding mix and milk. Whisk until the mixture is smooth and thickened.
- Gently fold in the Cool Whip until the mixture is well combined and smooth.
- In a 9×13 inch baking dish, place a layer of graham crackers on the bottom of the dish, covering the entire base.
- Spread half of the pudding mixture evenly over the layer of graham crackers.
- Add another layer of graham crackers on top of the pudding mixture.
- Spread the remaining pudding mixture evenly over the second layer of graham crackers.
- Add a final layer of graham crackers on top.
- Heat the chocolate frosting in the microwave for about 20-30 seconds or until it is soft enough to spread. Spread the frosting over the top layer of graham crackers.
- Refrigerate for at least 4 hours, or overnight, to allow the flavors to meld and the cake to set.
- Slice and serve chilled.
Notes
- For extra flavor, you can add a few teaspoons of vanilla extract to the pudding mixture.
- Make sure to refrigerate for several hours to ensure the cake has time to set and the graham crackers soften into a cake-like texture.
- You can garnish with additional whipped cream or fresh berries for extra decoration.
