Ingredients

For the crust:

  • 2 ½ cups (about 22 cookies) Oreo cookie crumbs

  • 24 ounces (675 g) cream cheese, at room temperature

  • 2/3 cup (142 g) sugar

  • 2 teaspoons pure vanilla extract

  • 2 ¼ cups (507 ml) heavy cream

  • 1 ½ cups (135 g) crushed Oreos (about 20 cookies with cream centers removed)

For the ganache:

  • 4 ounces (115 g) bittersweet chocolate, chopped

  • ½ cup (115 ml) heavy crea


Instructions

  • Prepare the crust: Combine Oreo cookie crumbs with melted butter. Press the mixture into the bottom of a 9-inch springform pan. Refrigerate to set.

  • Make the filling: Beat cream cheese, sugar, and vanilla extract until smooth. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture. Fold in crushed Oreos.

  • Assemble the cheesecake: Pour the filling into the prepared crust. Smooth the top with a spatula. Refrigerate for at least 8 hours, preferably overnight.

  • Prepare the ganache: Heat heavy cream in a saucepan until it just begins to simmer. Pour over chopped chocolate in a bowl. Let sit for 5 minutes, then stir until smooth. Let cool to room temperature.

 

  • Finish the cheesecake: Pour the ganache over the chilled cheesecake. Refrigerate until the ganache is set. Before serving, garnish with whole Oreos if desired.

Notes

Ensure the cream cheese is at room temperature to avoid lumps.

For a firmer cheesecake, allow it to chill overnight.
