Instructions
For the Pudding Filling:
- In a medium saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt until well combined.
- Over medium heat, cook the mixture, whisking constantly, until it begins to thicken and come to a gentle boil. This will take about 5-7 minutes.
- Gradually pour about 1/2 cup of the hot mixture into the beaten egg yolks while whisking constantly (this tempers the eggs and prevents them from scrambling).
- Slowly pour the egg mixture back into the saucepan, whisking constantly.
- Continue cooking the pudding mixture for another 2-3 minutes until it thickens further and becomes smooth.
- Remove from heat and stir in the butter and vanilla extract until fully combined and smooth.
- Pour the chocolate pudding into the pre-baked pie crust, smoothing the top with a spatula.
- Let the pie cool to room temperature, then refrigerate for at least 4 hours or until fully set.
For the Whipped Cream Topping:
- In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract on medium-high speed until soft peaks form.
- Once the pie has set, spread the whipped cream evenly over the top of the pie.
