Instructions

For the Pudding Filling:

  1. In a medium saucepan, whisk together the milk, sugar, cocoa powder, cornstarch, and salt until well combined.
  2. Over medium heat, cook the mixture, whisking constantly, until it begins to thicken and come to a gentle boil. This will take about 5-7 minutes.
  3. Gradually pour about 1/2 cup of the hot mixture into the beaten egg yolks while whisking constantly (this tempers the eggs and prevents them from scrambling).
  4. Slowly pour the egg mixture back into the saucepan, whisking constantly.
  5. Continue cooking the pudding mixture for another 2-3 minutes until it thickens further and becomes smooth.
  6. Remove from heat and stir in the butter and vanilla extract until fully combined and smooth.
  7. Pour the chocolate pudding into the pre-baked pie crust, smoothing the top with a spatula.
  8. Let the pie cool to room temperature, then refrigerate for at least 4 hours or until fully set.

For the Whipped Cream Topping:

  1. In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract on medium-high speed until soft peaks form.
