Ingredients
Cajun Seasoning
-
2 tsp smoked paprika
-
1 tsp oregano
-
1 tsp thyme
-
1/2 tsp garlic powder
-
1/2 tsp onion powder
-
1/4 tsp cayenne pepper
-
1/4 tsp black pepper
-
1/4 tsp salt
Chicken Pasta
-
1 Tbsp olive oil
-
1 Tbsp butter
-
1 lb. boneless, skinless chicken breast
-
1 yellow onion, diced
-
1/2 lb. penne pasta (uncooked)
-
15 oz. fire roasted diced tomatoes
-
2 cups chicken broth
-
2 oz. cream cheese
-
3 green onions, sliced
Instructions
-
Make the Cajun Seasoning: In a small bowl, combine smoked paprika, oregano, thyme, garlic powder, onion powder, cayenne pepper, black pepper, and salt. Set aside.
-
Cook the Chicken: Heat olive oil and butter over medium-high heat in a large pot. Add chicken breasts and cook for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken and set aside.
-
Sauté the Onion: In the same pot, add the diced yellow onion. Sauté for 2-3 minutes until softened.
-
Add the Cajun Seasoning: Stir in the Cajun seasoning and cook for 1 minute to bring out the flavors.
-
Add the Pasta and Liquids: Add uncooked penne pasta, fire-roasted diced tomatoes, chicken broth, and cream cheese. Stir to coat the pasta and distribute the cream cheese evenly.
-
Cook the Pasta: Bring the mixture to a simmer. Cover the pot and cook for 10-12 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
-
Slice the Chicken: While the pasta is cooking, slice the cooked chicken into bite-sized pieces.
-
Finish the Dish: Once the pasta is cooked, add the sliced chicken and sliced green onions. Stir to combine and adjust seasoning to taste.
Notes
Adjust the Heat: If you prefer a milder dish, reduce the amount of cayenne pepper or omit it entirely.
Creamier Texture: Add more cream cheese or a splash of heavy cream for a richer, creamier sauce.
Rest the Chicken: Let the chicken rest for a few minutes before slicing to keep it juicy.
Substitute Protein: You can substitute chicken with shrimp, sausage, or even tofu for a different twist.
