Description

This One Pot Chicken Alfredo is an easy, creamy, and indulgent pasta dish made in just one pot! Tender chicken breasts are cooked with garlic and a flavorful Alfredo sauce made from heavy cream and Parmesan cheese, then tossed with penne pasta. It’s a simple yet delicious meal that reduces cleanup and guarantees a rich, cheesy, and satisfying dinner.

Ingredients

Scale
  • 4 tablespoons olive oil, divided
  • 1 ½ pounds chicken breast, diced
  • 4 cloves garlic, minced
  • 1 quart low sodium chicken broth
  • 2 cups heavy cream
  • 1 pound penne pasta
  • 4 cups Parmesan cheese, freshly shredded with microplane
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Chicken:

    • In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat.
    • Add the diced chicken breast and cook until browned and cooked through, about 7-8 minutes.
    • Remove the chicken from the pot and set it aside.
  • Sauté the Garlic:

    • In the same pot, add the remaining 2 tablespoons of olive oil.
    • Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
  • Prepare the Sauce:

    • Pour in the chicken broth and heavy cream, stirring to combine.
    • Bring the mixture to a simmer and add salt and pepper to taste.
  • Cook the Pasta:

    • Add the penne pasta to the pot, stirring to ensure the pasta is submerged in the liquid.
    • Cover the pot and simmer for about 12-15 minutes, or until the pasta is cooked al dente and the liquid is mostly absorbed, stirring occasionally to prevent sticking.
  • Finish the Alfredo Sauce:

    • Once the pasta is cooked, stir in the freshly shredded Parmesan cheese until it melts and creates a creamy sauce.
    • Add the cooked chicken back into the pot and stir to combine.
    • Adjust seasoning with more salt and pepper if needed.
  • Serve:

    • Serve the Chicken Alfredo in bowls, garnished with fresh chopped parsley.

Notes

  • For extra richness, you can add a tablespoon of butter along with the Parmesan cheese.
  • You can substitute the penne with any pasta shape you prefer, like fusilli or fettuccine.
  • To make this dish lighter, you can use half-and-half instead of heavy cream.
