- 1 ½ pounds chicken breast, diced
- 4 cloves garlic, minced
- 1 quart low sodium chicken broth

- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)

- In a large pot or Dutch oven, heat 2 tablespoons of olive oil over medium heat.
- Add the diced chicken breast and cook until browned and cooked through, about 7-8 minutes.
- Remove the chicken from the pot and set it aside.

- Once the pasta is cooked, stir in the freshly shredded Parmesan cheese until it melts and creates a creamy sauce.
- Add the cooked chicken back into the pot and stir to combine.
