Instructions

  1. Sauté the Aromatics: Heat a bit of oil in a large pot or deep skillet over medium heat. Add diced onions, garlic, and green bell pepper, cooking until they soften and become fragrant, about 3-5 minutes.
  2. Toast the Rice: Stir in the uncooked rinsed rice, letting it lightly toast with the sautéed vegetables for 2-3 minutes to add a nutty flavor and help keep the grains separate.
  3. Add Liquids and Seasonings: Pour in the chicken or vegetable broth along with the diced tomatoes with green chilies, chili powder, cumin, salt, and pepper. Stir well to combine all the flavors evenly.
  4. Cook Until the Rice is Tender: Cover the pot and simmer on low heat for 15-20 minutes, or until the rice absorbs the liquid and is tender. Do not lift the lid too often to retain steam and ensure perfect cooking.
  5. Add Beans, Corn, and Cheese: Once the rice is cooked, gently fold in the black beans, corn, and about half of the shredded cheese. Replace the lid and let the cheese melt for 2-3 minutes.
